Ingredients:

  • For the wings:

    • 2 lbs chicken wings, split into drumettes and flats
    • 1 tbsp baking powder (not baking soda)
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • ½ tsp smoked paprika
    • ½ tsp salt
    • ½ tsp black pepper
  • For the zesty buffalo sauce:

    • ½ cup hot sauce (e.g., Frank’s RedHot)
    • 4 tbsp unsalted butter
    • 2 tbsp honey
    • 1 tbsp lime juice (freshly squeezed)
    • 1 tsp lime zest
    • 1 tsp ground cumin
  • For garnish and serving:

    • Fresh cilantro leaves
    • Lime wedges
    • Ranch or blue cheese dressing

Instructions:

  1. Prepare the wings:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top.
    • Pat the wings dry with paper towels to remove excess moisture (this helps achieve crispiness).
    • In a large bowl, toss the wings with baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  2. Bake the wings:

    • Arrange the wings on the wire rack in a single layer.
    • Bake for 40-45 minutes, flipping halfway through, until golden brown and crispy.
  3. Make the zesty buffalo sauce:

    • In a small saucepan over medium heat, melt the butter.
    • Stir in the hot sauce, honey, lime juice, lime zest, and cumin. Simmer for 2-3 minutes until the sauce is smooth and slightly thickened.
  4. Toss the wings in sauce:

    • Transfer the baked wings to a large bowl. Pour the buffalo sauce over the wings and toss until evenly coated.
  5. Serve:

    • Arrange the wings on a platter. Garnish with fresh cilantro and lime wedges. Serve immediately with ranch or blue cheese dressing on the side.
