Homemade Cookies and Cream Ice Cream
Ingredients:
For the Ice Cream Base:
- 2 cups (500ml) heavy cream
- 1 cup (250ml) whole milk
- ¾ cup (150g) granulated sugar
- 1 tsp vanilla extract
- 1 vanilla bean (optional, for extra flavor)
- Pinch of salt
- 4 large egg yolks
For the Cookies:
- 15–20 chocolate sandwich cookies (e.g., Oreos), coarsely crushed
Instructions:
Step 1: Prepare the Ice Cream Base
- In a medium saucepan, combine heavy cream, milk, sugar, and a pinch of salt.
- If using a vanilla bean, split it lengthwise and scrape the seeds into the mixture. Add the pod as well.
- Heat the mixture over medium-low heat, stirring occasionally, until hot but not boiling.
Step 2: Make the Custard
- In a separate bowl, whisk the egg yolks until pale and creamy.
- Slowly ladle about ½ cup of the hot cream mixture into the yolks while whisking constantly to temper them.
- Gradually pour the tempered yolks back into the saucepan, stirring continuously.
- Cook over low heat, stirring, until the mixture thickens slightly and coats the back of a spoon (do not let it boil).
- Remove from heat and strain the custard through a fine sieve to remove any lumps and the vanilla pod (if used).
- Stir in the vanilla extract and cool the custard to room temperature, then refrigerate for at least 4 hours or overnight.
Step 3: Churn the Ice Cream
- Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
Step 4: Add the Cookies
- During the last 5 minutes of churning, add the crushed cookies. Alternatively, fold them into the churned ice cream by hand to ensure even distribution.
Step 5: Freeze and Serve
- Transfer the ice cream to an airtight container, layering additional cookie chunks if desired.
- Freeze for 4–6 hours or until firm.
- Scoop and serve, optionally garnished with extra cookie crumbles or whipped cream.
Why This Recipe Stands Out:
- Classic Flavor: The combination of creamy vanilla and crunchy cookies makes this a timeless favorite.
- Customizable Cookies: Use chocolate sandwich cookies, chocolate chip cookies, or even gluten-free cookies to suit your preferences.
- Rich Custard Base: Ensures a creamy texture that perfectly complements the cookie crunch.
