 Herb and Cheese Stuffed Bratwurst 🌭✨

Ingredients:

  • For the bratwurst filling:

    • 1 lb ground pork (or a mix of pork and veal)
    • 1 tsp salt
    • ½ tsp black pepper
    • 1 tsp ground mustard
    • ½ tsp nutmeg
    • 1 tsp paprika
    • 1 garlic clove, minced
    • 2 tbsp fresh parsley, chopped
    • ¼ cup grated sharp cheddar or gouda cheese
  • For the sausage casing:

    • Natural hog casings (available at most butcher shops)
  • Optional toppings and sides:

    • Sauerkraut
    • Mustard
    • Pretzel rolls or buns
    • Grilled onions

Instructions:

  1. Prepare the casing:

    • Rinse the hog casings under cold water. Soak them in warm water for about 30 minutes. Rinse them inside and out by running water through them. Set aside.
  2. Make the filling:

    • In a mixing bowl, combine the ground pork, salt, pepper, mustard, nutmeg, paprika, garlic, parsley, and cheese. Mix until well combined but do not overwork the meat.
  3. Stuff the sausages:

    • Attach a sausage stuffer or funnel to your casing. Slide the casing onto the nozzle, leaving a bit of casing hanging at the end.
    • Fill the casing with the sausage mixture, being careful not to overstuff. Twist into 5-6 inch links as you go. Tie off the ends securely.
  4. Cook the bratwurst:

    • Grilling: Preheat your grill to medium heat. Grill the bratwurst for 10-12 minutes, turning frequently, until evenly browned and cooked through.
    • Pan-frying: Heat a skillet over medium heat. Add a splash of oil and cook the bratwurst, turning occasionally, for about 10 minutes until golden and cooked through.
    • Boiling: Simmer the bratwurst in beer or water with onions for 10 minutes before finishing them on the grill or skillet for added flavor.
  5. Serve:

    • Serve the bratwurst on a pretzel bun with sauerkraut, mustard, and grilled onions, or enjoy alongside potato salad or spaetzle.

Optional Variations:

  • Use smoked paprika and a splash of beer in the filling for a smoky twist.
  • Replace cheddar with blue cheese or Gruyère for a gourmet touch.
  • Add a pinch of chili flakes for a spicy bratwurst.
