Fresh Mint Chocolate Chip Ice Cream

Ingredients:

For the Ice Cream Base:
  • 2 cups (500ml) heavy cream
  • 1 cup (250ml) whole milk
  • ¾ cup (150g) granulated sugar
  • 1½ cups (30g) fresh mint leaves, tightly packed
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract (optional, for extra minty flavor)
  • 1–1½ cups (175–200g) dark chocolate, finely chopped or mini chocolate chips

Instructions:

Step 1: Infuse the Mint

  1. In a medium saucepan, combine heavy cream, milk, sugar, and mint leaves.
  2. Heat over medium-low heat, stirring occasionally, until the mixture is hot but not boiling (about 5 minutes).
  3. Remove from heat, cover, and let the mint steep for 30–40 minutes. The longer it steeps, the stronger the mint flavor.
  4. Strain the mixture through a fine sieve, pressing on the mint leaves to extract all the liquid. Discard the leaves.

Step 2: Make the Custard Base

  1. Return the strained mixture to the saucepan and reheat until warm.
  2. In a separate bowl, whisk the egg yolks until pale and creamy.
  3. Gradually add a ladle of the warm cream mixture to the yolks, whisking constantly to temper them.
  4. Slowly pour the tempered yolks back into the saucepan, stirring continuously over low heat until the mixture thickens slightly and coats the back of a spoon.
  5. Remove from heat and stir in the vanilla extract and peppermint extract (if using).
  6. Cool the custard to room temperature, then chill in the refrigerator for at least 4 hours or overnight.

Step 3: Churn and Add Chocolate

  1. Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
  2. During the last 5 minutes of churning, gradually add the chopped chocolate or mini chocolate chips.

Step 4: Freeze and Serve

  1. Transfer the churned ice cream to an airtight container and freeze for 4–6 hours until firm.
  2. Scoop and serve as is, or garnish with a sprig of fresh mint for presentation.
