Crispy Buttermilk Fried Chicken with Spiced Honey Glaze 🍗🍯
Ingredients:
For the Chicken Marinade:
- 2 lbs (about 8 pieces) bone-in, skin-on chicken (thighs, drumsticks, or wings)
- 2 cups buttermilk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional for heat)
- 1 tsp salt
- 1/2 tsp black pepper
For the Breading:
- 2 cups all-purpose flour
- 1/4 cup cornstarch (for extra crispiness)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
For Frying:
- 3-4 cups vegetable oil (canola, peanut, or sunflower oil works well)
For the Spiced Honey Glaze:
- 1/4 cup honey
- 1 tbsp butter
- 1/2 tsp chili flakes
- 1/4 tsp smoked paprika
Instructions:
Marinate the Chicken:
- In a large bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.
- Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight for best results.
Prepare the Breading:
- In a large, shallow dish, mix the flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.
Coat the Chicken:
- Remove the chicken from the buttermilk marinade, allowing excess liquid to drip off.
- Dredge each piece in the flour mixture, pressing firmly to ensure an even, thick coating. Place the coated chicken on a wire rack and let it rest for 10 minutes to allow the breading to adhere.
Fry the Chicken:
- Heat the oil in a large, deep skillet or Dutch oven to 350°F (175°C).
- Fry the chicken in batches to avoid overcrowding. Cook for 12-15 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (74°C) for the thickest part.
- Transfer the fried chicken to a wire rack over a baking sheet to drain excess oil.
Make the Spiced Honey Glaze:
- In a small saucepan, combine the honey, butter, chili flakes, and smoked paprika. Heat over low heat until the butter melts and the mixture is warm. Stir to combine.
Glaze the Chicken:
- Drizzle the spiced honey glaze over the hot fried chicken or serve it on the side as a dipping sauce.
