New Bibimbap Recipe: Tropical BBQ Bibimbap 🍍🍳🔥
Ingredients:
For the rice:
- 2 cups cooked jasmine or short-grain rice (warm)
- 1 tbsp sesame oil (optional for flavor)
For the toppings:
- 1 small pineapple, sliced and grilled
- 1 cup kimchi (traditional or citrus-infused)
- 1 small cucumber, julienned
- 1 carrot, julienned
- 1 small zucchini, spiralized or thinly sliced
- 1 cup sautéed spinach (seasoned with sesame oil and garlic)
- 4-6 cherry tomatoes, halved
- 1 egg (fried sunny-side up)
- 100g grilled tofu or beef (marinated in BBQ sauce)
- 1 tbsp toasted sesame seeds
- Chopped green onions for garnish
For the sauce:
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 1 tbsp honey or agave syrup
- 1 tsp sesame oil
- Juice of ½ lime
Instructions:
Prepare the rice:
- Mix the cooked rice with a little sesame oil for added flavor and fluff it up with a fork.
Prepare the toppings:
- Grill pineapple slices until caramelized and set aside.
- Sauté spinach with a dash of sesame oil and garlic.
- Grill or pan-fry tofu or beef until golden, brushing with BBQ sauce.
Make the sauce:
- In a small bowl, whisk together gochujang, soy sauce, honey, sesame oil, and lime juice. Adjust sweetness or spice to taste.
Assemble the Bibimbap:
- Divide the rice into bowls and arrange the toppings around the bowl in a colorful, circular pattern.
- Place the fried egg in the center. Drizzle the sauce over everything.
Garnish and serve:
- Sprinkle with toasted sesame seeds and green onions. Mix well before eating to combine the flavors.
Optional Additions:
- Add a handful of bean sprouts or edamame for extra crunch.
- Drizzle a bit of sriracha or chili oil for more heat.
