Ingredients:
For the marinade:
- 1 kg chicken (bone-in thighs, drumsticks, or whole)
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 2 tbsp honey
- 1 tbsp grated orange zest
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- ½ tsp smoked paprika (optional)
- 1 tsp garam masala
- 1 tsp chili powder (adjust to taste)
- Salt to taste
- 2 tbsp vegetable oil or mustard oil
For basting:
- 2 tbsp melted butter
- 1 tbsp honey
- 1 tbsp lemon juice
For garnish:
- Fresh cilantro leaves, chopped
- Sliced red onion rings
- Lemon or orange wedges
Instructions:
Prepare the chicken:
- Make deep cuts in the chicken pieces to allow the marinade to penetrate.
Marinate:
- In a large bowl, combine yogurt, lemon juice, honey, orange zest, ginger-garlic paste, and all the spices. Mix well.
- Coat the chicken thoroughly with the marinade, ensuring it gets into the cuts. Cover and refrigerate for at least 4 hours (overnight for best results).
Preheat and prepare:
- Preheat your grill, oven, or stovetop griddle to medium-high heat. If using an oven, preheat to 220°C (425°F). Line a baking tray with foil or place a wire rack over a tray.
Cook the chicken:
- Grill: Place the chicken on the grill and cook for 20-25 minutes, turning occasionally and basting with the melted butter, honey, and lemon juice mixture.
- Oven: Place the chicken on the prepared tray and bake for 25-30 minutes, basting halfway through. For a charred finish, broil for the last 3-5 minutes.
- Stovetop: Cook the chicken on a griddle or heavy skillet, flipping and basting frequently until fully cooked and slightly charred.
Serve:
- Transfer the chicken to a serving platter. Garnish with fresh cilantro, onion rings, and lemon or orange wedges.
Optional Variations:
- Replace chicken with tofu or paneer for a vegetarian version.
- Add roasted veggies like bell peppers, zucchini, or onions to the grill for a complete meal.
- Use smoked chili powder for extra depth in flavor.
