Ingredients:

  • For the filling:

    • 200g shrimp, peeled, deveined, and finely chopped
    • 1 tbsp soy sauce
    • 1 tsp sesame oil
    • 1 clove garlic, minced
    • 1 tsp grated ginger
    • 1 tbsp finely chopped scallions
    • 1 tsp chili paste or sriracha
    • 1 tsp cornstarch
  • For the wrappers:

    • 30 round dumpling wrappers (store-bought or homemade)
  • For steaming:

    • Parchment paper or cabbage leaves to line the steamer
  • For the dipping sauce:

    • 2 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tsp chili oil
    • 1 tsp honey or sugar (optional for balance)
    • 1 tsp minced garlic

Instructions:

  1. Prepare the filling:

    • In a bowl, mix chopped shrimp with soy sauce, sesame oil, garlic, ginger, scallions, chili paste, and cornstarch. Combine until evenly mixed.
  2. Assemble the dumplings:

    • Place a dumpling wrapper on a clean surface. Add 1 teaspoon of filling to the center.
    • Moisten the edge of the wrapper with water. Fold in half and pleat the edges to seal tightly.
    • Repeat until all wrappers are filled.
  3. Prepare the steamer:

    • Line the steamer with parchment paper or cabbage leaves to prevent sticking.
  4. Steam the dumplings:

    • Arrange the dumplings in a single layer in the steamer, leaving space between each.
    • Steam over boiling water for 8-10 minutes, until the shrimp is cooked and the wrappers are translucent.
  5. Make the dipping sauce:

    • In a small bowl, whisk together soy sauce, rice vinegar, chili oil, honey (if using), and minced garlic.
  6. Serve:

    • Transfer the dumplings to a plate and serve hot with the dipping sauce on the side.

Optional Variations:

  • Add finely chopped water chestnuts or shiitake mushrooms to the filling for extra texture.
  • Use ground chicken or pork instead of shrimp for a different protein.
